Instructions

Prepare the Orange Reduction

  • Combine orange juice, zest, honey, and sugar in a small saucepan. Bring to a simmer over medium heat, stirring occasionally, until the sugar dissolves and the mixture slightly thickens (about 5-7 minutes).
  • Remove from heat and let cool slightly. Blend until smooth for a perfectly refined sauce.

Make the Coconut Panna Cotta

  • Combine coconut milk and sugar in a small saucepan. Heat over low heat, stirring constantly, until the sugar dissolves completely. Do not boil.
  • Remove from heat and stir in vanilla extract.
  • In a separate bowl, whisk the Greek yogurt until smooth. Gently whisk in the coconut mixture.
  • Bloom the gelatin powder in 2 tablespoons of cold water for 5 minutes. Add the bloomed gelatin to the yogurt mixture and stir well to combine.
  • Pour the mixture into individual serving glasses or ramekins.
  • Refrigerate for at least 4 hours, or preferably overnight, until set.

Serve

  • Gently spoon the orange reduction over the chilled panna cotta before serving. Garnish as desired.

Recipe Notes

Expert Tips for the Perfect Panna Cotta:

  • Use full-fat coconut milk for the creamiest texture. Light coconut milk will result in a thinner panna cotta.
  • Don't boil the coconut milk mixture; gentle heating is key to prevent curdling.
  • Blooming the gelatin ensures it dissolves completely, preventing lumps in your panna cotta.
  • For a more intense orange flavor, use blood oranges. You can also substitute the orange reduction with any other fruit sauce or even a simple chocolate ganache.
