Ingredients
 

Coconut & Milk Base

  • 1 Coconut tender coconut, fresh, grated (remove the black skin)
  • 1 ltr Milk

Sweetener & Spices

Garnish & Optional

  • 1/4 cup Nuts chopped almonds, and raisins, cashews, mixed, pistachios
  • 1-2 strands Saffron Strands optional, for added color and flavor. soak in 1 teaspoon warm milk before adding.
  • 1 tsp Water for saffron soaking

Instructions
 

Prepare the Saffron (Optional)

  • Crush 1-2 saffron strands and soak them in 1 teaspoon of warm water or milk for at least 10 minutes to release their color and flavor.

Reduce the Milk

  • In a heavy-bottomed pan, heat the whole milk over medium heat. Stir frequently to prevent sticking or burning. Continue to simmer until the milk reduces to approximately 500-600ml (about half its original volume). This usually takes 20-30 minutes.

Add Coconut and Simmer

  • Add the grated coconut to the reduced milk. Stir well to combine and bring the mixture back to a gentle simmer. Cook for another 15-20 minutes, stirring occasionally, until the coconut is well incorporated and the kheer starts to thicken slightly.

Sweeten and Flavor

  • Stir in the sugar and cardamom powder. Continue to cook for another 5 minutes, or until the sugar has fully dissolved. If using, gently stir in the soaked saffron strands and mixed nuts.

Finish and Serve

  • Remove the kheer from the heat. Let it cool slightly, then transfer it to a serving bowl. Garnish with extra chopped nuts, if desired. Allow the kheer to chill completely in the refrigerator for at least 2 hours before serving for optimal flavor and texture.
