Ingredients
 

For the Kheer

  • 2 Apple cored, grated, large, peeled
  • 1/4 cup Date Paste chopped, khajoor pulp; alternatively, use 1/2 cup pitted dates
  • 2 cups Milk full cream milk preferred
  • 1 teaspoon Cardamom Powder elaichi; green cardamom powder preferred
  • 1/8 teaspoon Saffron Threads
  • 2 tablespoons Sugar adjust to taste, optional
  • 2 tablespoons Clarified Butter desi ghee preferred

For Garnishing

  • 2 tablespoons Nuts almonds, cashews, chopped, pistachios

Instructions
 

Prepare the Saffron

  • Soak 1/8 teaspoon of saffron threads in 2 tablespoons of warm milk for at least 15 minutes to allow the color and flavor to infuse.

Cook the Apples

  • Heat 2 tablespoons of ghee in a heavy-bottomed pan over medium heat. Add the grated apples and cook, stirring occasionally, until the apples soften and release their moisture. This should take about 5-7 minutes.

Add Milk and Simmer

  • Pour in the 2 cups of whole milk. Reduce the heat to low and simmer gently, stirring frequently, until the mixture thickens to your desired consistency. This will take approximately 15-20 minutes. Be patient and stir regularly to prevent sticking.

Incorporate the Remaining Ingredients

  • Stir in the date paste (or chopped dates), sugar (if using), cardamom powder, and the saffron milk. Continue to cook for another 2-3 minutes, stirring constantly.

Garnish and Serve

  • Remove from heat and let the kheer cool slightly. Garnish with chopped nuts and serve chilled.
