This is a delicious fusion preparation of rice and cheese along with burnt garlic, salsa and yellow and red bell paper. Its a Mexican style of cooking.

Ingredients
  

  • For salsa - Red bell paper 1 nos chopped
  • Yellow bell paper 1 nos chopped
  • Tomato large 2 nos chopped
  • Olive oil 2 teaspoons
  • Garlic cloves 6 nos chopped
  • Red chilli 2 nos
  • Salt
  • For Rice - Rice 1 1/4 cups
  • Salt
  • Onion big 1 no chopped
  • Olive oil 2 tablespoons
  • Carrot 1 greated
  • Sweet corn 1/4 cup
  • Cheese 2 cubes greated
  • Water 2 cups

  • Heat a pan with olive oil, then add chopped garlic to fry till light brown in color, then add one by one all the salsa ingredients above, fry till brown in color, then grind it to a fine paste.

  • For Rice -Take another pan, heat oil and add onion and fry it. Then add rice, salt, sweet corn and stir it well. Cook for 2 minutes, then pour the water and add the salsa paste mix it properly and cover it, cook it under low flame.

  • When rice is 80% prepared, add grated cheese and grated carrot, mix it and cover it for another 5 minutes to cook completely, then garnish with grated cheese and serve immediately.
