This is a delicious fusion preparation of rice and cheese along with burnt garlic, salsa and yellow and red bell paper. Its a Mexican style of cooking.
Heat a pan with olive oil, then add chopped garlic to fry till light brown in color, then add one by one all the salsa ingredients above, fry till brown in color, then grind it to a fine paste.
For Rice -Take another pan, heat oil and add onion and fry it. Then add rice, salt, sweet corn and stir it well. Cook for 2 minutes, then pour the water and add the salsa paste mix it properly and cover it, cook it under low flame.
When rice is 80% prepared, add grated cheese and grated carrot, mix it and cover it for another 5 minutes to cook completely, then garnish with grated cheese and serve immediately.
