Ingredients
For the Boondi (Gram Flour Drops):
- 1 kg Gram Flour besan
- 1/2 tsp Salt
- 1 ltr Oil for deep frying
- Water as needed, for gram flour batter

- 100 gm Cashews roughly chopped
- 100 gm Raisins
- 30 gm Cardamom finely ground cardamom (elaichi)
- 1 pinch Edible Camphor optional
- Optional Candies for added sweetness and texture, small
- 20 gm Food Coloring optional
Instructions
Prepare the Gram Flour Batter
- Combine gram flour and salt in a bowl. Gradually add water, mixing until you achieve a batter consistency similar to that used for making pakoras (fritters).
Make the Sugar Syrup
- In a heavy-bottomed pan, combine sugar and water. Stir occasionally over medium heat until the sugar dissolves completely and the syrup begins to boil.
- Once boiling, add cardamom powder and continue to cook for about 5 minutes. If using, add food coloring now.
- Test the syrup for one-string consistency (a thin thread should form when you lift a little syrup with your finger). Remove from heat and set aside.
Fry the Boondi
- Heat oil in a wide pan or kadai for deep frying. Using a ladle, carefully pour small amounts of the gram flour batter into the hot oil. Let it fry for a minute then gently tap the bottom of the pan in a circular motion to help the batter form into small, crispy boondi.
- Fry until golden yellow. Remove from oil and set aside on absorbent paper to drain excess oil.
- Repeat the process until all the batter is used up.
Prepare the Garnish
- In a small pan, heat ghee. Add cashews and raisins; fry until golden. Set aside.
Combine and Shape the Ladoos
- Add the fried boondi to the sugar syrup and gently mix using a large spoon or spatula. Quickly incorporate the fried cashews, raisins, and optional ingredients (candies, camphor). Avoid overmixing.
- While the mixture is still warm, take small portions of the mixture, roll them into medium-sized balls to form the ladoos.
Cool and Store
- Transfer the ladoos to a serving plate and let them cool for about 15 minutes before storing. Store in an airtight container for up to 10 days.
