Ingredients
For the Boondi
- 1 cup Gram Flour besan
- 1 cup Water for making batter
- 1 tsp Oil for gram flour batter
- 2 cup Oil for deep frying
For Garnishing and Flavor
- 1/4 tsp Cardamom Powder
- 1 tbsp Almonds sliced
- 1 tbsp Pistachios sliced
Instructions
Prepare the Boondi Batter
- In a mixing bowl, whisk together the gram flour and water until a smooth, pourable batter forms. Add 1 teaspoon of oil to the batter and mix well. Let it rest for 10-15 minutes.
Make the Sugar Syrup
- In a saucepan, combine sugar and 1/2 cup of water. Heat over medium heat, stirring until the sugar dissolves completely. Bring to a simmer and cook until a one-thread consistency syrup forms (it should coat the back of a spoon).
Fry the Boondi
- Heat 2 cups of oil in a deep kadai or pot. Using a perforated ladle, pour small amounts of the batter into the hot oil. The batter will drip through the holes, forming small boondi. Fry until golden brown and crispy. Remove with a slotted spoon and drain on a paper towel.
Soak the Boondi in Syrup
- Immediately transfer the hot boondi into the warm sugar syrup. Let it soak for 4-5 minutes, ensuring the boondi are evenly coated.
Drain and Combine
- Remove the boondi from the syrup, allowing any excess syrup to drain off. Gently mix in the sliced almonds, pistachios, and cardamom powder.
Shape the Laddu
- While the mixture is still slightly warm, gently roll the boondi mixture into small balls. Garnish with additional sliced pistachios if desired.
Cool and Serve
- Allow the laddu to cool completely before serving. Store in an airtight container at room temperature.
Recipe Notes
Expert Tips for Perfect Boondi Laddu
- For extra crispy boondi, ensure the oil is hot enough before adding the batter. Test by dropping a small amount of batter – it should sizzle immediately.
- Don't overcrowd the pan when frying the boondi; work in batches to maintain the oil temperature and ensure even cooking.
- The consistency of the sugar syrup is crucial. If it's too thin, the laddu will be sticky; if it's too thick, they'll be hard. Aim for a one-thread consistency.
- For a richer flavor, you can add a pinch of saffron strands to the sugar syrup while it simmers.
