Ingredients
Fish & Marinade
- 500 gm Seer Fish vanjaram meen, or kingfish; cut into 2-inch pieces
- 1/4 tsp Turmeric Powder haldi
- 1 tsp Chili Powder red
- 1 tsp Coriander Powder dhania
- 1/2 tsp Lemon Juice
- Salt to taste
Aromatics & Spices
- 100 gm Pearl Onions finely chopped, or 1 medium onion
- 10 clove Garlic medium sized, minced
- 1 Chili finely chopped, green
- 1 medium Tomato finely chopped
- 1 tsp Cumin Seeds jeera
- 1/4 tsp Mustard Seeds rai
- 1 tsp Coriander Powder dhania
- 2 tbsp Coconut Milk
Other Ingredients
- 1 Tamarind small ball, soaked in warm water and pulp extracted; or substitute with 1 tbsp lemon juice
- 1 sprig Curry Leaves
- 2 tbsp Cooking Oil
- Coriander for garnish
Instructions
Marinate the Fish
- Marinate the fish pieces with turmeric powder, red chili powder, coriander powder, salt, and lemon juice for at least 20 minutes.
Prepare the Aromatics
- Finely chop the pearl onions, garlic, green chili, and tomato.
Sauté Spices
- Heat oil in a pan or kadhai. Add mustard seeds and cumin seeds. Once they splutter, add curry leaves and sauté briefly.
Cook the Aromatics
- Add the chopped onions, garlic, and green chilies. Sauté until the onions turn golden brown.
Add Tomatoes & Spices
- Add the chopped tomatoes and cook until they soften. Then, add the remaining spice powders (turmeric, red chili, and coriander) and sauté for a minute until the raw smell disappears.
Incorporate Tamarind
- Add the tamarind pulp (or lemon juice substitute) and bring to a simmer. Cover and cook for a few minutes.
Add Coconut Milk
- Stir in the coconut milk. Bring to a gentle simmer, cover, and cook for another few minutes until the sauce slightly thickens.
Add the Fish
- Gently add the marinated fish pieces to the curry. Cover the pan and cook until the fish is almost cooked through (about 8-10 minutes, depending on the thickness of the fish pieces).
Simmer & Thicken
- Remove the lid, reduce heat to low, and simmer the curry until it thickens slightly and the oil separates from the sauce. This may take 5-7 minutes.
Garnish & Serve
- Garnish with fresh coriander leaves. Cover and let it rest for a few minutes before serving hot with steamed rice.
