Marinate the Fish

  • Marinate the fish pieces with turmeric powder, red chili powder, coriander powder, salt, and lemon juice for at least 20 minutes.

Prepare the Aromatics

  • Finely chop the pearl onions, garlic, green chili, and tomato.

Sauté Spices

  • Heat oil in a pan or kadhai. Add mustard seeds and cumin seeds. Once they splutter, add curry leaves and sauté briefly.

Cook the Aromatics

  • Add the chopped onions, garlic, and green chilies. Sauté until the onions turn golden brown.

Add Tomatoes & Spices

  • Add the chopped tomatoes and cook until they soften. Then, add the remaining spice powders (turmeric, red chili, and coriander) and sauté for a minute until the raw smell disappears.

Incorporate Tamarind

  • Add the tamarind pulp (or lemon juice substitute) and bring to a simmer. Cover and cook for a few minutes.

Add Coconut Milk

  • Stir in the coconut milk. Bring to a gentle simmer, cover, and cook for another few minutes until the sauce slightly thickens.

Add the Fish

  • Gently add the marinated fish pieces to the curry. Cover the pan and cook until the fish is almost cooked through (about 8-10 minutes, depending on the thickness of the fish pieces).

Simmer & Thicken

  • Remove the lid, reduce heat to low, and simmer the curry until it thickens slightly and the oil separates from the sauce. This may take 5-7 minutes.

Garnish & Serve

  • Garnish with fresh coriander leaves. Cover and let it rest for a few minutes before serving hot with steamed rice.
