  • Heat groundnut oil in a pan. Add chopped onions and sauté for 3 minutes until softened.
  • Add minced garlic, red chilies, and sauté for another 2 minutes.
  • Add Bengal gram dal, coriander seeds, and cumin seeds. Fry until golden brown, stirring frequently.
  • Stir in turmeric powder, grated coconut, and chopped tomatoes. Sauté for 1 minute. Add curry leaves and sauté for another minute.
  • Remove from heat and let cool completely. Grind to a coarse paste using a little water.

Make the Kulambu

  • In a pot or pan, add the prepared masala paste. Add cubed bottle gourd, salt, water, and tamarind pulp.
  • Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the bottle gourd is tender.
  • Stir occasionally to prevent sticking.
  • Taste and adjust salt if necessary.
  • Serve hot with steamed rice.
