  • 1 Coconut fresh or frozen, about 1 cup grated
  • 3 tbsp Oil vegetable oil or coconut oil
  • 3 cup Water

Prepare the Spice Paste

  • Dry roast red chilies, cumin seeds, coriander seeds, fennel seeds, black peppercorns, and fenugreek seeds in a pan until fragrant. Let cool, then grind into a fine paste with a little water.

Prepare the Coconut Paste

  • Dry roast the grated coconut until lightly browned. Grind into a fine paste with a little water.

Sauté Aromatics

  • Heat oil in a pressure cooker. Add mustard seeds and half the curry leaves; cook until they splutter.

Cook the Onions and Garlic

  • Add the chopped onions and ginger-garlic paste. Sauté until onions are translucent.

Add Duck Meat and Spices

  • Add the duck meat, turmeric powder, and salt. Cook until the meat is lightly browned.

Incorporate Spice Pastes

  • Add the ground spice paste and cook until fragrant.

Add Coconut Paste

  • Stir in the coconut paste and cook for a few minutes.

Simmer the Curry

  • Pour in three cups of water, bring to a boil, then pressure cook for 5 whistles. Allow pressure to release naturally.

Garnish and Serve

  • Transfer to a serving bowl, garnish with remaining curry leaves, and serve hot with steamed rice, idli, dosa, or parotta.
