Ingredients
Dry Fish
- 100 gm Anchovies nethili karuvadu, sun-dried; ensure to rinse thoroughly to remove any sand
Vegetables & Aromatics
- 2 Onion medium-sized, finely chopped
- 1 Tomato medium-sized, finely chopped
- 10 Curry Leaves
Spices
- 1/2 tsp Mustard Seeds rai
- 1/2 tsp Cumin Seeds
- 1 tsp Chili Powder adjust to your spice preference
- 1 tsp Coriander Powder dhania
- 1/2 tsp Turmeric Powder haldi
Other Ingredients
- 1 Gooseberry or 1 tbsp tamarind pulp
- 1.5 tsp Salt or to taste
- 3 tbsp Oil coconut oil recommended
- 2 cup Water for rinsing the fish
Instructions
Preparing the Anchovies
- Clean the anchovies by rinsing them thoroughly in 2 cups of water for a few minutes to remove any sand. Repeat this process several times until the water runs clear.
Sautéing Aromatics
- Finely chop the onions and tomatoes. Prepare tamarind extract (if using gooseberry, skip this).
- Heat oil in a kadai or pan. Add mustard seeds and cumin seeds, and then add curry leaves. Wait until the seeds splutter.
- Add the chopped onions and sauté until they turn translucent.
- Add the chopped tomatoes and cook until they soften and become mushy.
Adding Spices and Tamarind
- Add chili powder, coriander powder, turmeric powder, and a little salt. Sauté briefly until the raw smell of the spices dissipates.
- Stir in the tamarind extract (or gooseberry) and bring to a boil.
Cooking the Curry
- Add the cleaned anchovies to the curry. Cover the pan and cook until the raw smell of the fish is gone.
- Remove the lid, reduce the heat to medium, and simmer until the curry reaches your desired semi-thick consistency.
