Ingredients
For the Keema Balls
- 0.5 kg Mutton keema, minced
- 1 cup Gram Flour fried
- 0.5 inch Ginger
- 3 clove Garlic
- 0.25 cup Coconut pieces
- 0.5 inch Cinnamon stick
- 3 Cloves
- 3 Chili green
- 1 tsp Fennel Seeds
- 0.25 tsp Turmeric Powder
- Salt to taste
- 1 fistful Coriander leaves
For the Kurma
- 1 Onion chopped
- 3 Tomato chopped
- 1 tsp Ginger-Garlic Paste
- 1 tsp Chili Powder
- 0.25 tsp Turmeric Powder
- 0.25 cup Coconut grated
- 1 tsp Fennel Seeds
- 3 tsp Oil
- Salt to taste
- Coriander leaves, for garnish
- 3 cup Water
Instructions
- Grind the fried gram in a blender to a fine powder and set aside. This will help bind the keema balls and add a unique texture.
- In a pot, boil the minced mutton with salt and turmeric powder for 10 minutes. Draining the keema broth removes excess fat and impurities.
- Drain the keema broth and set aside. This flavorful broth will be used later in the kurma.
- Coarsely grind the ginger, garlic, coconut pieces, cinnamon, cloves, and green chilies. Combine this spice mixture with the cooled, cooked keema.
- Add the ground fried gram powder and coriander leaves to the keema mixture. Mix well to combine.
- Shape the keema mixture into small balls. Evenly sized balls ensure they cook uniformly.
- Steam the keema balls for 15 minutes until cooked through. Steaming keeps the keema balls moist and tender.
- Heat oil in a wok or large pan. Add the chopped onion and sauté until translucent. This builds a flavor base for the kurma.
- Add the ginger-garlic paste and sauté until the raw smell disappears. This removes the harshness of the raw paste.
- Add the chopped tomatoes and sauté until softened. This creates a rich and flavorful base for the kurma.
- Add chili powder, turmeric powder, and salt. Sauté for a minute to bloom the spices.
- Pour in the reserved keema broth.
- Bring the mixture to a boil and let it simmer for a few minutes. This allows the flavors to meld.
- Grind the grated coconut and fennel seeds together with a little water to form a smooth paste. This coconut paste adds creaminess and depth of flavor.
- Gently add the steamed keema balls to the simmering broth.
- Stir in the ground coconut paste and a cup of water. Simmer for a few minutes to thicken the kurma.
- Garnish with fresh coriander leaves. Serve hot with rice or rotis.
