Its a happy day today , my baby blog got thousand likes and this calls for a celebration. But today is Sunday and a busy day due to my little monster’s variety of classes, so cant bake anything elaborate. Hmm need to get something very simple, yet healthy and of course yummy too. How about whole wheat banana walnut muffin with cane sugar which can be whipped up in less then an hour. Sounds amazing isn’t it? I know it is 🙂 These muffins will pass all exams of being perfectly moist and yummy muffin. Did I mention they are pretty as a picture too. And the best part you dont need thousands of ingredients to get this beauty out from your oven. Lets talk what all we need to bake these pretty muffins : Banana WW Flour Sugar aka cane aka brown aka coconut aka palm and yeah white boring sugar would do too Walnuts Butter Butter Milk Eggs ?? Nope this is a complete egg less recipe You will not need a trip to supermarket to bake these as this is a pretty versatile recipe with almost every ingredient is replaceable, except Bananas afterall they are banana walnut muffins 😉 I am pretty sure everyone know the health benefits of all the ingredients but no harm in knowing some fun facts and general knowledge is very important : Bananas float in water because they are less dense in comparison. The banana is actually classified as a berry. Ohh thats a news then what is strawberry , a banana ?? Bananas may be considered a mood enhancer because it contains the amino acid, tryptophan and Vitamin B6 that helps the body produce serotonin.Ah so now we know what should we eat after we fight with our better halves 😉 Humans share about 50% of our DNA with bananas. So we are half siblings?? I hope you got a good laugh reading above now lets get back to the recipe !! And to tempt you here is the first pic out of the oven 🙂

Ingredients
  

  • whole wheat Flour 1.5 cup
  • Baking soda 1 teaspoon
  • Chopped walnuts 1/4 cup
  • Salt 1/8 teaspoon
  • Bananas 3
  • Melted Butter 1/2 cup
  • Cane Sugar 1 cup
  • Butter Milk 1/2 cup
  • Vanilla 1 teaspoon

Instructions
 

  • Sieve Flour,baking soda and salt together. Do it atleast 5 times.
  • In a big bowl mash bananas using fork or blender.Add melted butter until combined
  • Add buttermilk,sugar and Vanilla. Mix until combined.
  • Fold dry ingredients in wet mix.Do not over mix the batter
  • Dust walnuts and gently fold them in batter. Reserve some for topping
  • Line a muffin tray and fill the cups till 3/4th.Sprinkle the top with walnuts
  • Bake them on a preheated oven on 180 degrees.

Notes

  1. Use very ripe bananas.
  2. Taste your batter and adjust the sweetness. As it will vary based on bananas.
  3. In place of walnuts, choco chips or any nuts can be used. Or we can completely omit this step.
  4. For making buttermilk : take half cup of room temperature milk and add one tsp vinegar/lemon juice and keep it for 5 minutes.
  5. You can add spices like cinnamon, nutmeg or all spice. I did add cinnamon and it felt heavenly.
