Chicken Dum Biryani

Street food are always famous because they provide less ingredients and economic to common people. People don't bother whether it is hygienic or not they just crazy. Most of the home they don't allow to cook non-veg at home. If they're foods lover they can't resist themselves, they just go dhaba or any other street level vendor. They don't use expensive spices, they prepare their own spices, but they know how to attract customers. Chicken biryani is one of the economic famous non-veg dish.

Ingredients
- 300 gm chicken pieces
- 250 gm rice
- 1 tablespoon garlic paste
- 1 tablespoon Ginger paste
- 1 medium sized onion finely chopped
- 3-4 bay leaves
- 5-6 cloves
- 10-12 pepper corn
- 1 star Annis
- 1/2 cup curd
- 1 red chili powder
- 2 whole red kashmiri mirch
- 2 black cardamom
- 4 green cardamom
- 1 teaspoon cumin powder
- 1 tablespoon coriander powder
- 2 drops red food colour
- 1 teaspoon biryani masala home made
- 2 drops mitha ittra mughlai aroma
- 2 cinnamon sticks
- 4 tablespoon refine oil

Instructions
- Take a mixing bowl add chicken pieces, curd, cumin powder, coriander powder, red chili powder, ginger paste, garlic paste. Mix all together and marinate for 15-20 minutes. Keep aside.
- Now heat a frying pan add oil then fry the finely chopped onion.
- Fry until golden brown. Strain the oil and keep aside which is called Barista.
- Now take a deep cooking pan add a glass of water and bring to boil. Put whole spices, cloves, bay leaves, pepper corn, black cardamom, green cardamom, cinnamon stick and star Annis.
- Now put the washed and strained rice and 1 tbsp oil. Close the lid let cool for 10 minutes. It should not fully cooked.
- Now heat a pan add oil, put bay leaves and whole red chilli.
- Now add the marinated chicken.
- Stir continuously it should not stuck the bottom.
- Add 1 cup water and cook for 10 minutes.
- Now for dum biryani take steel pan add a layer of 1/3 cooked rice. Then a layer of cooked chicken.
- For remaining rice add edible colour and odour mix well. Give a layer of mixed 1/2 of colourful rice.
- Now the layers of remaining cooked chicken.
- This is the last layer of colourful rice.
- Now sprinkle with dried onions that is Barista.
- Cook in a double boiler. Take a large metal bowl sufficient water to place the biryani pan.
- Seal the pan and cook for 10 in medium flame.
- Open the lid and you will feel the aroma. Serve as much you like.
- Sprinkle with Barista. Serve the hot dum biryani with salad.
Notes
Boil in double boiler is needed for dum biryani.
If you have left over biryani again you want to make it hot. Do in a process double boiler.
