I love strawberries, but only issue with them is they come to market for very less time and for sure one need to preserve them. Lets see some fun facts around strawberries , after all who doesn’t like to flaunt good general knowledge : Strawberries are the only fruit that wear their seeds on the outside Strawberries aren’t true berries, like blueberries or even grapes. each seed on a strawberry is considered by botanists to be its own separate fruit. Strawberries are members of the rose family. No wonder both looks pretty romantic ! Belgium has a museum dedicated to strawberries. Strawberries are believed to help reduce the risk of heart disease and certain cancers. Strawberries contain high levels of nitrate.People who load up on strawberries before exercising have greater endurance and burn more calories. May 21-27 is Strawberry Week in Delaware. And yes, it’s celebrated annually. There are three different types of strawberries: June-bearing, overbearing and day neutral. Strawberries contain more vitamin C than oranges and they help in reducing inflammations. They are great even for treating cataracts and other eye diseases. You think strawberries are only red? Think twice! There are yellow, blue, white, black, purple strawberries too. Some strawberries are of apple size. We can go on and on .. there is no ending on strawberries. But all in one nutshell is “THEY ARE AMAZING” Lets get back to the main dish. As we see strawberries for very few number of days , it’s good to preserve them for future use. There are two ways to do that, one make a jam or make a preserve. I like preserve more as it is less sweet and can be used various ways. In my family we use it all ways possible like top it with morning granola/cornflake,make strawberry yogurt,milkshakes and best eat it with the spoon :). In airtight jar it can be stored for months in freezer and for weeks in fridge. But trust me it gets over in days no matter what quantity you make ! Most attractive this about the the strawberry preserve is we only need three main ingredients: Lemon,sugar and of course strawberries And like soulbakes is known of we have to do a healthy twist, this preserve is made of cane sugar. And trust me no one can guess it! Do give a try and make your sad looking dishes pretty !

Ingredients
 

  • 1 Lemon
  • 2 cup Cane Sugar
  • 1 kg Strawberries
  • 1 stick Cinnamon
  • 1/4 cup Water

Instructions
 

  • Wash strawberries and remove the stem.

  • Chop strawberries in small pieces.
  • Add lemon juice and sugar. Give them a mix.

  • Leave them aside for about 45 minutes.
  • Take a deep pan on medium flame and put strawberries. Add cinnamon stick.

  • Add 1/4 cup of water. After it starts boiling, start mashing it. It will look like a watery paste.

  • Keep it on low flame till water evaporates.
  • Keep a steal plate in freezer for 5 minutes. take it out and put few drops of preserve on it. Put this plate back in freezer for a minute. If the preserve is ready it will not become icy.
  • Switch off the flame . Bring it on room temperature and store it in airtight jar.

Recipe Notes

  1. I used cinnamon as I love the flavor. We can use vanilla or any spice of preference. Or it can be completely omitted.
  2. Lemon acts as preservative to this preserve.
  3. Increase or decrease sugar as per your taste. This measurement will make mildly sweet preserve.
