Gongura Chicken

Gongura chicken is an Andhra style dry chicken recipe made with Gongura (Roselle)leaves. It is slightly hot, spicy and tangy. Gongura chicken is a very flavorful dish made with fresh gongura leaves and few basic spice ingredients. A perfect side dish. I love to have this with piping hot steamed rice and dal or sambar.

Ingredients
  

  • Gongura leaves - 1 cup
  • Green Chilly - 5 slit
  • Curry Leaves - 2 sprigs
  • Cumin seeds - ½ tsp
  • Garam Masala powder - ½ tsp
  • Oil - 1 tbsp
  • Ghee - 1 tbsp You can use Oil too
  • For Marination: Chicken - 300 gms
  • Onion - 1 coarsely grounded
  • Lemon juice - ½ tsp
  • Red chili powder - 1 tsp
  • Coriander powder - ½ tsp
  • Ginger garlic paste - 1 tsp

Instructions
 

  • Marinate the chicken with the marination ingredients and set aside for few mins.
  • Heat the oil in a pan. Add the gongura leaves and saute well till they wilt off fully. Keep aside to cool.
  • Take the gongura leaves, green chilies and grind them coarsely.
  • In a pan add the chicken. Cover the pan and cook the chicken for about 10 mins in medium flame. Stir occasionally. Let the water released from chicken evaporate completely.
  • Heat the ghee in a pan. Add curry leaves and cumin seeds and let them crackle. Add the chicken, garam masala powder and fry for 2-3 mins.
  • Add the gongura paste, mix well with the chicken and fry till the moisture released by gongura leaves dries up and oil starts to leave the sides.
  • Serve gongura chicken fry with plain rice and rasam or dal.

Notes

If one can’t source the gongura leaves, they can use gongura pickle which is available in market but for authentic taste and flavour i recommend to use fresh gongura leaves.
