Fig-Almond Cookies

These are absolutely delicious. You will like them, I am sure.. why I am saying this is because my fussy eater toddler loved these and wanted every now and then.. he comes to me and cutely asks "biki" in his language pointing his finger to the cupboard 😆. Soft, buttery, mildly sweet and a very slight flavour of fresh orange...and ofcourse healthy.. please do try it.

Ingredients
  

  • about 7-8 medium dried figs
  • 1/4 cup fresh orange juice
  • 1/2 cup sliced almonds toasted and cooled
  • 3 )4 cup whole wheat flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon Salt
  • 1/2 teaspoon ground cinnamon
  • 65 gms butter softened at room temperature
  • 5 tablespoon brown sugar
  • 1 egg yolk
  • Freshly grated zest of 1/2 small orange
  • 1/4 teaspoon vanilla extract

Instructions
 

  • Place the figs in a small saucepan with the orange juice and bring the mixture to a simmer. Remove from heat and allow the figs and juice to cool completely.
  • spread the chopped almonds in an even layer on a parchment-lined baking sheet. Toast the almonds until they are golden brown and aromatic. Remove them from the baking sheet and allow them to cool completely.
  • Grind the nuts finely in a food processor, transfer them to a small bowl, then chop the softened figs along with the juice until they are a chunky purée.
  • .In a medium bowl, whisk the flour, baking soda, salt and cinnamon together and set aside.
  • .Place the softened butter and brown sugar in the bowl and beat them together until the mixture is creamy and light, about a minute. Beat in the egg yolk, scraping down the sides of the bowl, followed by the orange zest and vanilla.
  • Whisk in the dry ingredients to make a homogeneous dough, then whisk in the chopped almonds and figs. Scrape the dough together, cover and chill until firm enough to roll, about 1 hour.
  • Preheat the oven to 180° C.Line two baking sheets with parchment paper. 8.take the dough out and make balls (about an inch or little more in diameter). Flatten the balls slightly with your fingers. place on the baking sheet, spaced 2cm apart.
  • Bake the cookies for 12 to 14 minutes, or until they are golden brown, cracked slightly and firm. Allow the cookies to cool slightly on the baking sheets, then remove them to a rack to cool completely.

Notes

*you may substitute egg with flaxseed or chia seeds egg. If so then don’t add it in step 5. Add in step 6.
*You may substitute orange with honey. Take 3 tbsp honey + 2 tbsp water
