Chicken salad recipe is one of the most popular American dish which one can have anytime of the day preferably for lunch and dinner. When you are on diet and want to reduce weight, Chicken salad comes to rescue as it satiates the hunger as well the tongue.
It fills up the stomach so that there is no more craving for junk food. Enjoy healthy Chicken salad with strawberries and poppy seeds.

Ingredients
  

  • 4 cup Romaine lettuce
  • 1 cup Strawberry sliced
  • 1 cup Blueberries fresh
  • 1 cup Mandarin oranges
  • 1 cup Pineapple chunks
  • ½ cup Pecans toasted and cut into Halves
  • 1 Grilled chicken breast sliced

Poppy Seed Dressing

  • ½ cup Light mayonnaise
  • ¼ cup Skimmed milk
  • 1 teaspoon Dijon Mustard
  • ¼ cup Orange juice
  • ¼ cup Sugar
  • 1/8 cup Apple cider vinegar
  • ¾ tablespoon Poppy seed
  • Salt if required, to taste

Instructions
 

  • In a glass bowl toss the Salad ingredients together.
  • Whisk together dressing ingredients
  • Drizzle the dressing to the salad ingredients and toss gently.

Notes

  1. You may lightly roast the poppy seeds to make it crispier.
  2. Wash and keep the lettuce in chilled water, in order to keep it fresh and crispy
  3. Add the dressing to the salad just before service, inorder to prevent it from becoming soggy.
  4. You may add baby spinach ¼ th bunch, if you are a spinach lover.
  5. You may marinate the chicken with extra virgin olive oil and dried herbs before grilling and then slice.
