1 cup chopped spanich
1 medium size potato (peeled and sliced)
2 green chikitsa finely chopped
Salt as per taste
1/2 teaspoon black pepper powder
3 tablespoons cooking oil
Break the eggs in mixing bowl, add salt, black pepper powder, green chilies and spinach. Mix it really well and keep aside.
Heat oil in pan, place all the potato slices in heated oil and shallow fry from both the sides till it turn into light golden brown.
Pour egg mixture on all over the pan. Cover the lid and cook till it done. Take knife n prick it in omelette to check omelette cooked well or not. Knife came out clean so it means spinach omelette is ready to serve.
Serve this with toasted bread and tomato ketchup.
