Achari Eggs, spicy yet full of flavor and aroma. This recipe combines hard boiled eggs with spices usually used to make Indian pickles. If you like spicy food then you would definitely love this one.

Ingredients
  

  • 3 egg
  • 3 teaspoon oil
  • ½ teaspoon Cumin seeds
  • ¼ teaspoon fenugreek seeds
  • ½ teaspoon Fennel seeds
  • ½ teaspoon Nigella seeds kalonji
  • 3 teaspoon Curd thick
  • 2 green chillies slit
  • 4 dry red chilies broken
  • 1 onion finely chopped
  • 1 teaspoon Ginger garlic paste
  • 1 tomato finely chopped
  • ½ teaspoon turmeric powder
  • 1 teaspoon Red chilly powder
  • ½ teaspoon Coriander powder
  • Water as required
  • 1 teaspoon Lemon Juice
  • Salt as per taste
  • ½ teaspoon Mustard seeds

Instructions
 

  • First hard boil the eggs, peel them and and make 3-4 slashes and keep aside.
  • Take the Mustard seeds, Cumin seeds, Fenugreek seeds, Fennel seeds, Nigella seeds (Kalonji), dry red chillies and coarsely grind it.
  • In a bowl add the eggs, slit green chillies, curd, ground masalas, salt, mix well and keep aside while you prepare the other ingredients.
  • In a pan heat the mustard oil.Add the chopped onion and fry until translucent.
  • Add the ginger garlic paste and saute for a min.
  • Add the tomatoes and saute until it turns mushy.
  • Add the turmeric powder, chilli powder and coriander powder, mix well and cook for a couple of minutes till the oil leaves the sides of the pan.
  • Add the marinated eggs, mix well gently without breaking the eggs and continue to cook on a medium heat for around 2-3 mins stirring in between occasionally.
  • Add some water and bring to a boil, cover the pan and simmer on a low heat and cook for another 5-10 mins stirring occasionally.
  • Switch off the heat, add the lemon juice, mix well. Serve hot.

Notes

  • You can garnish with chopped coriander leaves and serve.
