Whole Wheat Som Tam Bread

This inspiration of flavours originated from our fondness for Som Tam, a Thai salad. It is a popular dish / salad in Thailand. Me and my kids (especially my elder one) really love the blend of flavours... Sweet, Spicy, Tangy..it has all in One Single Dish.
So I just tried creating a Bread with these flavours. Its not an Yeasted Bread. It has a texture of Banana Bread but with Raw Papaya and other infusions. I have tried to include most of the ingredients of the salad in this bread and the outcome is amazing. Serve it with some Maple syrup / Butter / Jam. Its yum.

Ingredients
- Whole wheat Flour - 4 Cups
- Baking Soda - 1.5 tsp
- Salt - 1 tsp
- Garlic Crushed - about 7-8 cloves
- Jaggery grated - 1/2 cup
- Chilli flakes - 2 tsp I used this instead of chillies
- Green Raw Papaya grated - 2 cups
- Lemon juice - 2 tsp
- Dry Roasted Peanuts crushed - 1/2 cup
- Oil - 3/4 cup
- Milk - 1/2 cup
- Walnuts optional - 1/4 cup
- Eggs - 3

Instructions
- Grease a loaf pan.
- Pre heat the oven.
- Mix garlic, jaggery, papaya, chilli flakes, lemon juice, peanuts and walnuts in a bowl.
- Let it sit for about 15 minutes for the flavours to blend.
- Meanwhile, mix the flour, soda and salt in a bowl.
- Now whisk eggs in the papaya mix.
- Add oil and milk and whisk again.
- Add the flour mix.
- Whisk until all well blended.
- Pour this into the pan.
- Bake at 180 deg for 25 min.
- Further at 160 deg for another 30 min.
- Insert a knife or toothpick to see if its done.
- If not done bake for 10 min at 140 deg.
