Ingredients
  

  • 1 cup Gram Flour Besan
  • 1 teaspoon Turmeric Powder
  • Salt to taste
  • 1 pinch Baking Soda
  • 2 Potatoes Boiled, Peeled and mashed
  • 1 teaspoon Green Chili Paste
  • 1 teaspoon Ginger garlic paste
  • Handful Coriander Leaves chopped
  • Red Chili Powder to taste
  • ½ teaspoon Garam Masala
  • teaspoon Lemon Juice
  • 1 tbsp Oil
  • ½ teaspoon Mustard Seeds
  • ½ teaspoon cumin seed
  • 1 pinch Asafoetida
  • 4 Curry Leaves
  • Dry Garlic Chutney for spreading
  • Coriander or Mint Chutney, for spreading
  • Sweet Tamarind Chutney for spreading
  • Oil to deep fry

Instructions
 

  • In a bowl add gram flour, salt, 1/2 tsp turmeric powder, baking soda and make coating consistency batter by adding water.
  • Heat oil in a pan. Add mustard seeds and cumin seeds. When they crackle add asafoetida and curry leaves.
  • Now add green chilli paste and ginger & garlic paste. Saute it for few seconds.
  • Add 1/2 tsp turmeric powder, mashed potatoes, red chilli powder, garam masala, salt. Mix well.
  • Add lemon juice and chopped coriander into it.
  • Divide the mixture into small balls.
  • Dip the balls into gram flour batter and deep fry them till they turn golden brown. Drain on absorbent paper.
  • Slice the pav into half. Spread tamarind chutney and coriander or mint chutney on inner sides of pav.
  • Now spread dry garlic chutney and stuff with vadas.
