Saffron Kulfi Served With Mango And Chia Seeds

Popular Frozen Dessert From India . Synonymous to Ice crème but is more glamorous and creamier and richer . It has been served with Chia Seeds soaked overnight in milk and cut mangoes which is very much season . Drawn together in a Margarita Glass to give an artistic look to our very own Desi Temptation.

Ingredients
- 1 ltr full cream milk
- 1 bread slice Use brown bread to give kulfi a nice color. You can also use normal white bread
- 1 tsp cardamom powder
- ​​1/4th cup sugar
- 1 tsp corn flour
- ​2 tbsp pistachio
- Pinch of Saffron
- 2 cup of chopped mangoes
- 1 and 1/2 cup milk
- 1/2 tsp chia seeds

Instructions
- Cut the bread from side to remove the brown part.
- Mix bread, corn flour and 1/2 cup milk. Blend till smooth in blender.
- Boil milk in a wok and bring it to boil. Lower the flame to prevent milk to spill over. Remember to continuously stir the milk to prevent it to stick to the bottom.
- Add the corn flour-bread mixture to the milk. This will give milk a nice thick and smooth consistency. Cook on low for 5 minutes more.
- Add sugar and keep the milk boiling on low flame for 2-3 minutes.
- Add pista and saffron and cook again for 2 minutes.
- Add cardamom powder and switch off the flame.
- Let the mixture cool down.
- Pour the mixture in an air -tight container and put it in freezer. The iKulfi will take 6-7 hours to set.
- Take your Glasses where you want to serve . And pour 2 tbsp of chia seeds milk mixtture in each glass
- Add chopped mangoes
- Demould the Kulfi and arrange above the mangoes
- Garnish with dry fruits
- Enjoy the dessert chilled
