A under 100 calorie dessert is hard to imagine, but with a little thought put in, is not impossible to create. On my weight loss journey something I often missed making were desserts, but when you love doing something as much as my love for creating desserts you always find a way out. This silky, creamy and delicious Pannacotta ditches the cream for low fat yogurt and minimal sweetener in the form of honey, checkout this super simple recipe if you too want to indulge without guilt.
1001/2 cup grams low fat yogurt (home made dahi works great)
1/2packet - 4 grams Agar agar flakes or powder
1+1/4 cups water
100grams1/2 cup fresh pitted cherries or any other berries of choice
Salt - a tiny pinch
2-3drops vanilla extract or essence
Start by soaking the Agar agar flakes in 1 cup of water of 30 minutes.
Next heat the Agar agar and water till all the agar agar has completely melted in the water.
Now to this water add in the milk and bring to a boil, switch off the flame and set aside.
Now whisk the yogurt in a bowl and pour in the hot milk mixture into the yogurt, whisk to combine well, here also add in the vanilla extract, honey and a tiny pinch of salt .
Pour into four serving glasses and refrigerate for two hours once the mixture comes to room temperature.
To make the cherry sauce, in a saucepan add fresh pitted cherries along with 1/4 cup water and allow to cook on a low flame, once the cherries turn into a pulp and all the water evaporates switch off the gas and allow to cool down.
Spoon the prepared cherry sauce over the cool pannacotta, garnish with fresh cherries and a few mint leaves.
Instead of vanilla extract feel free to use any other berry flavoured extract or essence of choice.
