Ingredients
Pasta
- 1/2 package Farfalle Pasta
Sauce and Vegetables
- 1 jar Pasta Sauce red
- 1 Onion diced
- 2-3 Tomatoes diced
- 1 Bell Peppers chopped
- 250 gm Broccoli
Seasoning and Garnish
- 1 tbsp Olive Oil
- Salt to taste
- Pepper black, freshly ground, to taste
- Spring Onions finely chopped
Instructions
- Cook the farfalle pasta according to package directions in a large pot of generously salted boiling water. Salting the water properly seasons the pasta from the inside out.
- Drain the cooked pasta and rinse it under cold water. This stops the cooking process and prevents the pasta from sticking together. Drain thoroughly.
- Gently toss the drained pasta with the red pasta sauce. Cover and refrigerate for 15 minutes to allow the flavors to meld.
- Heat the olive oil in a large frying pan over medium heat.
- Add the diced onion to the pan and sauté for about 3 minutes, stirring occasionally, until softened and translucent.
- Add the diced tomatoes, chopped bell pepper, and broccoli florets to the pan. Sauté for 4-5 minutes, stirring occasionally, until the vegetables are tender-crisp and fragrant.
- Add the refrigerated pasta mixture to the pan with the sautéed vegetables. Cook for 3-4 minutes, stirring gently, to heat through and combine the flavors.
- Season with salt and freshly ground black pepper to taste. Toss to combine. Garnish with finely chopped spring onions before serving hot.
