Prepare the Arabiatta Sauce

  • Cook tomatoes in boiling water for 5-7 minutes, then peel and mash them.
  • Heat olive oil in a pan, sauté minced garlic and chopped onion until softened.
  • Add the mashed tomatoes, tomato ketchup, sugar, salt, and pepper. Simmer for 5 minutes.
  • Stir in chopped parsley. Set aside.

Cook the Pasta and Grill Vegetables

  • Bring a large pot of salted water to a boil. Add farfalle pasta and cook according to package directions.
  • While pasta cooks, preheat a grill pan or broiler.
  • Toss diced bell peppers and sliced French beans with olive oil, salt, and pepper. Grill until tender-crisp.

  • Melt butter in a pan and sauté minced garlic briefly.

  • Add pitted black olives.

Combine and Finish

  • Drain the cooked pasta and add it to the pan with sautéed vegetables.
  • Toss to combine. Add mixed dried herbs, salt, and pepper.

Plate the Pasta Garden

  • Place a generous dollop of Arabiatta sauce on a serving dish and spread it to create a rectangular base.
  • Arrange lettuce leaves on one corner of the sauce.
  • Layer the farfalle pasta over the sauce. Repeat the layering with sauce and pasta, ending with pasta on top.
