Ingredients
Pasta
- 1 cup Mini Penne Pasta cooked
- 1/2 cup Chickpeas cooked
Sauce
- 1/2 cup Homemade Vegetable Stock
- Salt And Pepper to taste
- 1/4 tsp Italian Seasoning
- 2 tsp Olive Oil
Homemade Vegetable Stock
- 3 cup Water
- 1 Carrot chopped
- 1 small Onion chopped
- 1 clove Garlic unpeeled
- 10 Beans chopped, green
- 4 Celery Stalks with leaves
- Other Leftover Vegetables optional
- 1 Bay Leaf
- Parsley fresh, to taste
- Thyme fresh, to taste
Instructions
- In a large saucepan, combine the chopped carrot, onion, unpeeled garlic clove, green beans, celery stalks with leaves, and any other leftover vegetables you like. Add the bay leaf, fresh parsley, and thyme. Pour in the water.
- Bring the mixture to a rolling boil. Then, reduce the heat to low, partially cover the saucepan, and simmer for 15-30 minutes, or until the vegetables have released their flavor into the stock but still retain some of their own taste. This gentle simmering extracts maximum flavor without overcooking the vegetables.
- Strain the stock through a fine-mesh sieve or a sieve lined with cheesecloth into a clean bowl. This removes the solids and leaves you with a clear, flavorful stock.
- Let the stock cool completely before transferring it to an airtight container. Store in the refrigerator for up to 2-3 days.
