Ingredients
Pasta
- 10 ounces Spaghetti or your preferred pasta shape
Sauce Ingredients
- 2 Onions finely chopped
- 28 ounces Canned Tomatoes blanched, crushed, or approximately 4 large tomatoes, peeled, seeded and pureed
- 2 clove Garlic minced
- 1 tsp Pepper Flakes or to taste, red
- 1 tsp Oregano dried
- 1/2 tsp Basil dried
- 1 1/2 tsp Salt or to taste
- 2 tbsp Olive Oil
Garnish
- 1/2 cup Parmesan Cheese grated
- 2 tbsp Parsley chopped, fresh, optional
Instructions
Cook the Pasta
- Boil salted water in a large pot. Add the pasta and cook according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
Blanch (optional) and Puree Tomatoes
- If using fresh tomatoes, bring a pot of water to a boil. Add the tomatoes, cook for 1 minute, then transfer to an ice bath. Peel, seed, and puree the tomatoes.
Sauté Aromatics
- Heat olive oil in a large pan over medium heat. Add the onions and sauté until softened, about 5 minutes. Add the garlic and cook for another minute until fragrant.
Simmer the Sauce
