  • 10 ounces Spaghetti or your preferred pasta shape

  • Boil salted water in a large pot. Add the pasta and cook according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.

Blanch (optional) and Puree Tomatoes

  • If using fresh tomatoes, bring a pot of water to a boil. Add the tomatoes, cook for 1 minute, then transfer to an ice bath. Peel, seed, and puree the tomatoes.

Sauté Aromatics
