Ingredients
Pasta & Sauce
- 3 cup Pasta any short pasta shape like penne, or farfalle; add 1 tbsp olive oil and salt to boiling water, rotini
- 1 cup Pasta Sauce your favorite jarred or homemade sauce
Vegetables
- 2 Carrots sliced
- 1 cup Bell Peppers any color or a mix of colors, diced
- 1 Onion chopped
- 1/2 cup Beans green, trimmed and chopped
- 3 Chilies green, slit; adjust to your spice preference
Seasoning & Oil
- 2 tbsp Olive Oil
- 1/2 tsp Basil dried or fresh
- 1-2 tsp Salt or to taste
- 1 tsp Chili Flakes or to taste
- 1/2 tsp Sugar to balance acidity of the sauce
Cheese
- 1/2 cup Mozzarella Cheese grated
Instructions
Prepare the Vegetables
- Chop all the vegetables into bite-sized pieces.
Sauté the Vegetables
- Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the onion and sauté until softened, about 3-5 minutes. Add the carrots, bell pepper, and green beans and cook until tender-crisp, about 5-7 minutes. Add the green chilies during the last minute of cooking.
Cook the Sauce
- Stir in the remaining 1 tablespoon of olive oil, chili flakes, basil, salt, sugar, and pasta sauce. Cook for 2-3 minutes, allowing the flavors to meld.
Combine Pasta and Sauce
- Add the cooked pasta to the pan with the vegetables and sauce. Toss gently to combine, ensuring the pasta is evenly coated. Cook for another 2-3 minutes to heat through.
Melt the Cheese
- Transfer the pasta to an oven-safe bowl. Sprinkle the grated mozzarella cheese over the top. Microwave for 2-3 minutes, or until the cheese is melted and bubbly. Alternatively, broil in the oven for 2-3 minutes until golden brown and bubbly.
