Ingredients
Spices & Aromatics
- 2 gm Split Chickpea split chickpeas; also known as split bengal gram
- 1 cup Coriander fresh cilantro
- 2 cup Mint Leaves fresh
- 2-3 Chilies adjust to your spice preference, green
- 1 inch Ginger fresh
Seasoning & Liquid
- 1.5 tsp Salt or to taste
- 1-2 tbsp Lemon Juice to taste; adjust for desired tartness
- 2 tbsp Mustard Oil
- 1/4 cup Water add as needed for desired consistency

Preparation
- Wash and soak the chana dal in water for at least 1 hour, or preferably 2-3 hours.
Grinding
- Drain the soaked chana dal. Combine the chana dal, coriander leaves, mint leaves, green chilies, ginger, salt, lemon juice, and mustard oil in a blender.
Blending
- Blend until you reach your desired consistency. Add water, a tablespoon at a time, if needed to achieve a smooth or slightly coarse texture.
Serving
- Taste and adjust seasoning as needed. Serve immediately or store in an airtight container in the refrigerator for up to 3 days.
