Ingredients
Chutney Ingredients
- 1 cup Chickpeas chana, green
- 1 Bell Peppers chopped, green, medium
- 1 Tomato chopped, green, medium
- 4 Chilies green
- 1 bunch Coriander dhania, fresh
- 2 Tbsp Coconut Paste
Shahi Masala (Optional)
- 1 tsp Homemade Shahi Masala see notes for details
Other
- Himalayan Salt pink, to taste
Instructions
- Combine the green chickpeas, chopped green bell pepper, chopped green tomato, green chilies, cilantro, and coconut paste in a food processor or blender.
- Pulse the ingredients until they are finely chopped but not completely smooth. A slightly coarse texture is desirable for chutney.
- If using, add the Shahi Masala. Taste and adjust seasonings with pink Himalayan salt. For a tangier chutney, add a squeeze of lemon juice.
- Serve the Green Chana Chutney immediately or store it in an airtight container in the refrigerator for later. It's delicious with salads, dosa, idli, chilla, fruit chaat, or as a condiment for any meal.
Recipe Notes
Good To Know
- For a smoother, creamier chutney, briefly blanch the green chana before blending; this will soften their texture and mellow their grassy notes.
- If you prefer a smoky depth, roast the capsicum and green tomato directly over an open flame or in a very hot oven until blistered, then peel and add to the blender for a subtle charred flavor.
- To make this chutney vegan and nut-free, substitute the coconut paste with soaked sunflower seeds or roasted chana dal for a similar creamy body.
Expert Tips
- Adjust the spice level by adding more or fewer green chilies. Taste and adjust as needed before blending.
- For a brighter, fresher flavor, add a squeeze of lime juice just before serving.
- This chutney pairs well with grilled meats, fish, or vegetables. It’s also delicious as a sandwich spread or with crackers.
Storage Instructions
- Store leftover chutney in a glass jar in the refrigerator for up to 3 days; its flavors actually deepen overnight, making it even better as a next-day spread or dip.
