Ingredients
Chutney Ingredients
Tadka Ingredients
- 1 tsp Oil sesame oil or coconut oil
- 1/2 tsp Mustard Seeds
- 1/2 tsp Lentil black, split black lentils
- pinch Asafoetida hing
- 5-6 Curry Leaves
- 1 Chili broken into pieces, dried, red
Instructions
- Thoroughly wash the mortar and pestle. This ensures a clean flavor profile.
- Add the grated coconut, chopped green chilies, roasted chana dal, salt, and soaked tamarind to the mortar.
- Using the pestle, begin crushing the ingredients. Work from one end of the mortar to the other, using a pounding and grinding motion.
- Periodically scrape down the sides of the mortar to bring the ingredients back to the center. Continue crushing until a coarse paste forms. The coarse texture is key to a proper Getti Chutney.
- Sprinkle a few drops of water only if needed to facilitate grinding. Avoid adding too much water, as this will make the chutney runny.
- Once the desired consistency is reached, transfer the chutney to a serving bowl.
Tadka
- Heat the oil in a small pan over medium heat. Add the mustard seeds and let them splutter. This releases their aromatic oils.
- Add the urad dal, asafoetida, curry leaves, and dried red chili. Sauté until the urad dal turns golden brown. This adds a wonderful nutty flavor and aroma.
- Pour the hot tadka over the chutney and mix well. The tadka adds a final layer of flavor and aroma to the chutney.
- Serve the Getti Chutney immediately with idli, dosa, vada, or any South Indian breakfast dish.
