  • 1 cup packed Coriander fresh
  • 10 Garlic cloves, peeled
  • 1 Chili Pepper green
  • 1/4 Mango or 1 tbsp amchur powder (dry mango powder), raw
  • 1.5 tsp Salt
  • 2 tbsp Aloo Bhujia adds a unique crunch and flavor, also known as optional
  • 2-3 tbsp Water add gradually to reach desired consistency

Instructions
 

Washing the Coriander

  • Thoroughly wash the fresh coriander leaves 2-3 times by submerging them in a bowl of water, gently swirling, and removing. Repeat this process to remove any impurities.

Blending the Ingredients

  • Pick only the coriander leaves, discarding the stems. Combine the coriander leaves, garlic cloves, green chilies, and raw mango in a blender.

Achieving the Right Consistency

  • Add 2-3 tablespoons of water, blending in small increments to prevent a runny consistency. Blend until a smooth paste forms.

Adding Optional Ingredients & Seasoning

  • Add the optional aloo bhujiya (fried potato sticks) and blend again. Finally, add salt and blend one last time.

Storing the Chutney

  • Transfer the chutney to a clean, dry glass jar, seal tightly, and refrigerate for up to 10-15 days. Always use a clean, dry spoon when serving to maintain freshness.
