Vegetable And Barley Soup

OOMugi Barley samples arrived home as part of the Belly Nirvana program with goIndiaOrganic. Decided to use the barley and make a soup.

Ingredients
- OOMugi Barley
- Carrots
- Beans
- Cabbage
- Any other vegetables as per your preference
- Butter
- Ginger garlic paste
- Salt
- Red chilli powder
- Turmeric Powder
- Black pepper

Instructions
- Soak the Barley for about an hour and drain the water
- Take a Pan with some oil. After the oil is heated, add the vegetables starting with carrots as they might take more time to soften
- Add ginger garlic paste to the veggies and saute them well.
- Add salt as per seasoning required. Add a pinch of turmeric and mix well
- Add red chilli powder and mix the ingredients well. Let the vegetables cook for 4 to 5 minutes in low flame.
- Add the soaked barley and mix well.
- Add around 3 cups of water or as per the number of servings needed corresponding to the vegetable portions used.
- Cover the pan and let it cook for about 10 mins or until the barley is done.
- Once the barley is cooked, add black pepper and let the soup simmer for a few minutes. Serve hot !
