- 10-12 piece Young Jackfruit fresh, green
- 1/4 cup Bell Peppers diced, green
- 1/4 cup Bell Peppers diced, red
- 1/4 cup Bell Peppers diced, yellow

- 2 tsp Lemon Juice
- 1 tsp Chili Flakes
- 1 tsp Pepper black
- 1 tsp Herbs mixed
- Salt to taste

Instructions
- Dice the bell peppers.
- Carefully cut each jackfruit piece away from the core and remove the seeds. Set the seeds aside for another use if desired.
- In a saucepan, boil the jackfruit pieces in 2 cups of water for 10 minutes. This tenderizes the jackfruit, giving it a meaty texture.
- Drain the jackfruit and set it aside.
- Heat 2 tablespoons of olive oil in a large skillet or wok over medium-high heat. Add the jackfruit and stir-fry until lightly browned. This enhances the flavor and creates a slightly crispy exterior.
- Add the diced bell peppers to the skillet and stir-fry until slightly softened but still crisp-tender.
- Add the steamed rice, chili flakes, black pepper, and mixed herbs to the skillet. Stir-fry for 3-4 minutes, allowing the flavors to meld.
- Stir in the soy sauce, lemon juice, and salt to taste. Serve hot, garnished with fresh coriander leaves (optional).
