Ingredients
For the Jackfruit Mixture:
- 1 large Jackfruit young jackfruit, boiled until tender, green, then shredded
- 1/2 cup Gram Flour besan, roasted lightly until fragrant
- 2 tbsp Coriander Powder roasted lightly until fragrant
- 2 tsp Cumin Powder roasted lightly until fragrant
- 1 tsp Pepper Powder black
- 1/2 tsp Cinnamon Powder
- 1/2 tsp Ginger Powder
- 1/2 tsp Chili Powder adjust to taste, red
- 2 tsp Kebab Masala
- 1/4 tsp Nutmeg Powder
- 1/2 tsp Mango Powder dry mango powder
- 1 tbsp Clarified Butter
- Salt to taste
For Coating and Frying:
- 1/2 cup Puffed Rice
- 2 tbsp Vegetable Oil for shallow frying
Other:
- 8-10 Wooden Skewers soaked in water for at least 20 minutes
- Optional Mint Leaves for garnish, fresh
Instructions
Prepare the Skewers
- Soak wooden skewers in water for at least 20 minutes to prevent burning during cooking.
Make the Jackfruit Mixture
- In a large bowl, combine the shredded boiled jackfruit, roasted gram flour, roasted coriander powder, roasted cumin powder, black pepper powder, cinnamon powder, ginger powder, red chili powder, kebab masala, ghee, nutmeg powder, amchur powder, and salt. Mix thoroughly until a cohesive dough forms.
Shape and Coat the Kebabs
- Divide the jackfruit mixture into 8-10 equal portions. Shape each portion into a cylindrical kebab around a soaked wooden skewer. In a separate shallow dish, place the puffed rice.
- Roll each kebab in the puffed rice, ensuring itβs evenly coated.
Shallow Fry the Kebabs
