Instructions

Prepare the Skewers

  • Soak wooden skewers in water for at least 20 minutes to prevent burning during cooking.

Make the Jackfruit Mixture

  • In a large bowl, combine the shredded boiled jackfruit, roasted gram flour, roasted coriander powder, roasted cumin powder, black pepper powder, cinnamon powder, ginger powder, red chili powder, kebab masala, ghee, nutmeg powder, amchur powder, and salt. Mix thoroughly until a cohesive dough forms.

Shape and Coat the Kebabs

  • Divide the jackfruit mixture into 8-10 equal portions. Shape each portion into a cylindrical kebab around a soaked wooden skewer. In a separate shallow dish, place the puffed rice.
  • Roll each kebab in the puffed rice, ensuring it’s evenly coated.

Shallow Fry the Kebabs

  • Heat vegetable oil in a large skillet over medium heat. Carefully place the kebabs in the skillet and shallow fry for 3-4 minutes per side, or until golden brown and heated through. Do not overcrowd the pan. Work in batches if needed.

Serve

  • Garnish with fresh mint leaves (optional) and serve hot. Enjoy!

Recipe Notes

Expert Tips for Perfect Vegan Jackfruit Seekh Kebabs

  • For the best results, use young, tender green jackfruit. Ripe jackfruit will be too sweet for this recipe.
  • Roasting the spices beforehand enhances their flavor significantly. Toast them in a dry skillet over low heat for a few minutes, until fragrant.
  • Don't be afraid to adjust the amount of red chili powder to your preferred level of spiciness.
  • If the jackfruit mixture is too dry, add a tablespoon or two of water to achieve a smoother consistency.
