Ingredients
Dry Ingredients
- 1 cup Whole Wheat Flour whole
- 2 tbsp Soybean Flour or all-purpose flour
- 1/2 tsp Turmeric Powder haldi
- 1/2 tsp Garam Masala
- 1/2 tsp Salt to taste
Mango & Spice Paste
- 1 cup Mango Pulp from approximately 1 ripe mango
- 2 Chilies green
- 1 Ginger
Aromatics & Herbs
- 1/2 cup Onion finely chopped
- 3 sprigs Curry Leaves
- 1/4 cup Coriander chopped
Instructions
Prepare the Mango & Spice Paste
- Grind green chilies and ginger with a little water to form a paste. Strain to remove any excess fiber.
Combine Dry Ingredients
- In a large bowl, whisk together whole wheat flour, soybean flour, turmeric powder, garam masala, and salt.
Prepare the Aromatics
- Finely chop the onion, curry leaves, and coriander leaves. Grate the mango using a vegetable grater to extract the pulp.
Combine Wet and Dry Ingredients
- In a separate bowl, combine the mango pulp, onion, curry leaves, coriander leaves, and the prepared green chili-ginger paste.
- Add the wet ingredients to the dry ingredients. Gradually add water, mixing until a soft, pliable dough forms.
Shape and Cook the Roti
- Divide the dough into small, equal-sized balls. Roll each ball into a thin, circular roti using a rolling pin.
