Ingredients
For the Sweet Paniyaram Batter
- 2 cup Appam Batter store-bought or homemade f2f (fermented)
- 1/2 cup Jaggery grated, or use an equal amount of brown sugar
- 1/4 tsp Salt adjust to taste
- 1/2 tsp Cardamom Powder elaichi powder, finely ground
- 2 tbsp Water for dissolving the jaggery
For Cooking
- 3 tbsp Refined Oil or any neutral-flavored cooking oil
- 1 Paniyaram Pan alternatively, use a mini muffin tin
Instructions
Prepare the Jaggery Syrup
- Dissolve the jaggery in 2 tablespoons of water in a small saucepan over low heat. Stir continuously until the jaggery melts completely and forms a smooth syrup. Set aside to cool slightly.
Combine Batter and Sweetener
- In a large bowl, gently combine the cooled jaggery syrup with the appam batter. Whisk until thoroughly mixed and ensure no lumps remain.
Add Spices and Seasoning
- Add the salt and cardamom powder to the batter. Mix well to distribute the spices evenly.
Prepare the Paniyaram Pan
- Heat a paniyaram pan over medium-high heat. Add 2-3 drops of oil into each cavity of the pan.
Cook the Paniyaram
- Once the oil is hot, carefully pour a ladleful of batter into each cavity, filling them about ¾ full. Reduce heat to medium-low, cover the pan with a lid, and cook for 2-3 minutes.
Flip and Finish Cooking
- Gently flip each paniyaram and cook for another 1-2 minutes on the other side, until golden brown and cooked through. Add a few more drops of oil to the cavities if needed.
Serve and Enjoy
- Remove the cooked paniyaram from the pan and serve warm. Enjoy them as is, with a side of chutney, or drizzle with chocolate sauce for an extra decadent treat.
