Ingredients
For the Chila Batter
- 1/2 cup Gram Flour besan; also known as gram flour
- 1 cup Mint leaves
- 1/4 cup Cilantro dhania
- 1 medium Onion finely chopped
- 2 Chili Pepper finely chopped; adjust to your spice preference, green
- 1/2 - 1 tsp Salt to taste
- 1 tbsp Water as needed to adjust batter consistency
Instructions
Prepare the Mint Paste
- Grind fresh mint leaves, coriander leaves, and green chilies into a smooth paste using a blender or food processor.
Make the Chila Batter
- In a mixing bowl, combine gram flour, half of the prepared mint paste, finely chopped onion, and salt. Gradually add water, mixing until you achieve a thick, yet spreadable batter. The batter should be slightly thicker than pancake batter.
Assemble and Cook the Chila
- Spread 1-2 tablespoons of the batter evenly onto one side of each leftover roti.
- Heat oil in a non-stick pan or griddle over medium heat. Place the roti (batter-side down) onto the hot pan. Cook until golden brown and crispy, about 2-3 minutes per side.
- Repeat with the remaining rotis.
Serve
- Serve the minty roti chila hot. Garnish with a sprinkle of extra chopped coriander (optional). Enjoy with tomato ketchup, chutney, or a cup of hot tea.

Expert Tips for Perfect Minty Roti Chila
- For a crispier chila, let the batter rest for 10-15 minutes after mixing. This allows the gram flour to absorb the liquid, resulting in a better texture.
- Adjust the amount of green chilies according to your spice preference. If you prefer a milder chila, use fewer chilies, or remove the seeds before blending.
- Don't overcrowd the pan while cooking. Cook the rotis in batches to ensure even browning and crisping.
- Experiment with other herbs and spices! Adding a pinch of cumin powder, turmeric powder, or red chili powder can enhance the flavor profile of your chila.
