Ingredients

- 0.5 tsp Salt or to taste

- In a large bowl, combine the rice flour and salt.
- Gradually add the water to the rice flour mixture, mixing continuously with your hands until it resembles wet sand.
- The mixture should hold its shape when squeezed but crumble easily when pressed. This texture is crucial for a light and airy puttu. Let the mixture rest for 5 minutes.
- If using a traditional coconut shell, select one with three eyes. Gently break one of the eyes to create a hole for steam to escape.
- Grease the inside of the coconut shell or puttu steamer with ghee or coconut oil. This prevents sticking and adds flavor.
- Fill the pressure cooker with enough water to create steam and bring it to a boil. Close the lid without the whistle.
- Begin layering the puttu. Start with a layer of grated coconut, followed by chopped mango, then a layer of the rice flour mixture. Repeat these layers, ensuring they are loosely packed, and finish with a top layer of grated coconut.
- Place the filled coconut shell or puttu steamer over the cooker's steam vent. Cover with a lid or damp cloth. Steam over medium heat for 10 minutes, or until steam visibly escapes from the puttu, indicating it's cooked through.
- Carefully remove the cooked puttu. Invert it onto a serving plate. If cooked properly, it should slide out easily. Serve immediately and enjoy!
