Ingredients
- 8 Roti quartered left over rotis
- Oil deep fry
- 1 cup Mung Bean moong dal, washed and soaked for 1 hour, yellow
- 1.5 tsp Salt or as per taste
- 1/2 tsp Pepper black
- 1/2 tsp Chili Powder red
- 1/2 tsp Mango Powder dry
- 1 tsp Cumin Seeds jeera, whole
- 1/2 tsp Turmeric Powder haldi
- Water
Instructions
Prepare the Roti Pakoras
- Chill the quartered rotis in the refrigerator for 5 minutes. Heat the vegetable oil in a deep pan or kadai over medium-low heat. Carefully add the roti pieces in batches and deep fry until golden brown and crispy. Remove with a slotted spoon and set aside on a paper towel-lined plate to drain excess oil. The pakoras will crisp up further as they cool.
Cook the Spiced Moong Dal
- In a pressure cooker, combine the soaked moong dal, water, salt, and turmeric powder. Cook on high heat until 3 whistles are released. Allow the pressure to release naturally.
Temper and Serve
- Heat ghee or oil in a small pan. Add the cumin seeds and saute until fragrant. Pour the tempering over the cooked dal. Gently mash the dal with a fork or potato masher to achieve a slightly chunky consistency. Stir in the red chili powder, black pepper, and amchur powder. Serve the hot spiced moong dal immediately with the crispy roti pakoras.
