Instructions

Prepare the Roti Pakoras

  • Chill the quartered rotis in the refrigerator for 5 minutes. Heat the vegetable oil in a deep pan or kadai over medium-low heat. Carefully add the roti pieces in batches and deep fry until golden brown and crispy. Remove with a slotted spoon and set aside on a paper towel-lined plate to drain excess oil. The pakoras will crisp up further as they cool.

Cook the Spiced Moong Dal

  • In a pressure cooker, combine the soaked moong dal, water, salt, and turmeric powder. Cook on high heat until 3 whistles are released. Allow the pressure to release naturally.

Temper and Serve

  • Heat ghee or oil in a small pan. Add the cumin seeds and saute until fragrant. Pour the tempering over the cooked dal. Gently mash the dal with a fork or potato masher to achieve a slightly chunky consistency. Stir in the red chili powder, black pepper, and amchur powder. Serve the hot spiced moong dal immediately with the crispy roti pakoras.

Expert Tips for Perfect Roti Pakoras and Spiced Moong Dal

  • For extra crispy pakoras, ensure your rotis are completely dry before frying. You can gently pat them with a paper towel to remove any excess moisture.
  • Adjust the amount of red chili powder according to your spice preference. If you prefer a milder dal, reduce the amount or omit it altogether.
  • Soaking the moong dal for at least an hour, or even overnight, helps to reduce cooking time and makes it softer and easier to digest.
  • For a richer flavor, you can add a pinch of asafoetida (hing) while tempering the cumin seeds.
