Prepare the Rotis

  • Break the leftover rotis into small pieces.
  • Grind the roti pieces into a fine crumb using a food processor or blender.

Make the Tadka

  • Heat the vegetable oil in a pan over medium heat.
  • Once hot, add the mustard seeds and cumin seeds. Let them splutter.
  • Add the finely chopped green chilies and sauté for a minute until fragrant.
  • Add the finely chopped onions and sauté for 5 minutes until softened.

Combine and Cook

  • Stir in the red chili powder, turmeric powder, coriander powder, and salt. Mix well.
  • Add the ground rotis to the pan and mix thoroughly with the spice mixture.
  • Cook for about 3 minutes, stirring occasionally, until heated through and slightly crispy.
  • Remove from heat and stir in the sugar.
  • Cover the pan and let it sit for 2 minutes to allow the flavors to meld.

Garnish and Serve

  • Garnish with fresh coriander leaves.
