Ingredients
Lentils and Seeds
- 1 cup Gram black, split
- 1/2 cup Chickpea split
- 1/4 cup Sesame Seeds
Spices and Aromatics
- 25 Chili Pepper dried, red
- 2 tsp Asafoetida hing
- 2 sprigs Curry Leaves torn
Instructions
- In a dry skillet, roast the black urad dal, chana dal, sesame seeds, dried red chilies, and curry leaves one at a time. Use a low to medium heat. Roast each ingredient until it turns fragrant and golden brown. This enhances their nutty flavors and creates a deep aroma.
- Allow the roasted ingredients to cool completely. This prevents the residual heat from steaming the mixture and ensures a crisp texture.
- Once cooled, transfer the ingredients to a grinder or food processor. Add the asafoetida and salt. Grind to a coarse powder. You can adjust the grind to your preference, but a slightly coarse texture is traditional.
- Transfer the Nellai Milagai Podi to an airtight container. Store in a cool, dry place. This helps preserve the flavors and aroma for 2-3 months.
