Ingredients
 

For the Kheer

  • 1/2 ltr Milk whole milk recommended for richness
  • 1 cup Bottle Gourd finely grated, lauki
  • 1/4 cup Gram Flour besan, roasted lightly
  • 1/2 cup Sugar adjust to your preferred sweetness
  • 1/2 tsp Cardamom elaichi, freshly ground for best flavor
  • 1/4 cup Almonds slivered or chopped
  • 2 tbsp Clarified Butter clarified butter, desi ghee preferred

Instructions
 

Preparing the Bottle Gourd

  • Dry roast the gram flour in a pan over medium heat until fragrant. Set aside.
  • In a kadai or saucepan, heat the ghee. Add the grated bottle gourd and cook for 10-12 minutes, stirring occasionally, until softened and most of the moisture has evaporated.

Cooking the Kheer

  • In a separate pan, bring the milk to a boil. Add the cooked bottle gourd and simmer for 10 minutes, stirring frequently to prevent sticking.
  • In a small bowl, whisk the roasted gram flour with a little cold milk to form a smooth paste. Gradually add this paste to the simmering milk, stirring continuously to prevent lumps.
  • Continue to cook for 5-7 minutes, stirring constantly, until the kheer begins to thicken.

Finishing Touches

  • Add the sugar, cardamom powder, and almonds. Stir well to combine.
  • Simmer for another 5-7 minutes, or until the desired consistency is reached. The kheer will thicken further upon cooling.
  • Remove from heat and let the kheer cool slightly.

Serving

  • Garnish with chopped pistachios (optional). Serve warm or chilled.
