Instructions

Prepare the Aromatics

  • Peel and roughly chop 2 medium onions. Finely chop the tomatoes.

Sauté the Spices

  • Heat coconut oil in a pan or kadai. Add mustard seeds, cumin seeds, and curry leaves. Cook until the seeds crackle.

Cook the Onions and Tomatoes

  • Add the chopped onions and cook until they turn golden brown. Stir in the chopped tomatoes and cook until soft and mushy.

Blend the Onion Mixture (Optional)

  • For a smoother gravy, you can blend the cooked onion and tomato mixture using a blender or food processor before proceeding to the next step.

Add Spices and Cook

  • Add chili powder, turmeric powder, cumin powder, and fenugreek powder. Stir well and cook until the raw smell of the spices disappears. Season with salt.

Add the Prawns

  • Add the prawns and cook for 5 minutes.

Simmer the Gravy

  • Pour in 1 cup of water. Cover the pan and cook until the prawns are fully cooked.

Thicken the Gravy

  • Remove the lid and simmer on medium heat for about 5 minutes, or until the gravy has thickened to your desired consistency.

Serve

  • Serve hot with rice, curd rice, or Indian breads.

Recipe Notes

Expert Tips for the Best Prawn Gravy

  • For a richer flavor, use freshly ground spices instead of pre-ground powders.
  • Adjust the amount of chili powder according to your spice preference.
  • If you prefer a thicker gravy, simmer it uncovered for a longer period.
  • Garnish with fresh cilantro (coriander) leaves before serving for an extra touch of freshness and vibrancy.
