Instructions

Marinate the Prawns

  • Combine the prawns with ginger-garlic paste, chili powder, turmeric powder, cumin powder, garam masala, lemon juice, yogurt, and salt. Mix well and let it marinate for at least 30-60 minutes, or longer for a more intense flavor.

Sauté Aromatics

  • Heat oil in a pan over medium heat. Add mustard seeds and let them splutter. Add finely chopped onions, green chilies, and half of the curry leaves. Sauté until onions become translucent.

Add Spices and Tomatoes

  • Add turmeric powder, cumin powder, and chili powder. Sauté for about a minute until fragrant. Add the chopped tomatoes and fry until they become soft and mushy.

Simmer and Finish

  • Pour in 1/2 cup of water. Stir in the remaining curry leaves and garam masala powder. Bring to a simmer, then reduce heat and cook for 5-10 minutes, or until the sauce has thickened slightly. Remove from heat.

Serve

  • Serve your delicious Prawn Masala hot with steamed rice or roti. Enjoy!

Recipe Notes

Expert Tips for the Best Prawn Masala:

  • For extra flavor, use freshly ground spices instead of pre-ground.
  • Adjust the amount of green chilies to control the spiciness level.
  • Don't overcook the prawns; they should be tender and juicy.
  • Garnish with fresh cilantro before serving for an added touch of freshness and color.
