  • 1 medium Onion finely chopped
  • 3 Chilies finely chopped, green
  • 1 medium Tomato finely chopped
  • 1/4 cup Coriander dhania, chopped, plus extra for garnish

Preparing the Spice Base

  • Heat the oil in a pan or pot. Add the cinnamon stick, cardamom pods, and cloves. Sauté until fragrant, about 30 seconds.

Sautéing Aromatics

  • Add the finely chopped onion and green chilies. Sauté until softened, about 2-3 minutes. Stir in the ginger-garlic paste and half of the chopped coriander leaves. Sauté for another minute until fragrant.

Adding Spices and Prawns

  • Add the chili powder, coriander powder, and turmeric powder. Stir well and cook for 1 minute to prevent burning. Add the prawns, cover the pan, and cook over low heat until most of the moisture has evaporated (approx. 5 minutes).

Simmering and Finishing

  • Add the remaining chopped coriander leaves, garam masala, grated coconut, salt, and water. Bring to a simmer, then reduce heat to medium-low and cook for 10 minutes, stirring occasionally, until the sauce thickens to your desired consistency. Stir in the lemon juice just before removing from heat.

Garnish and Serve

  • Garnish with remaining fresh coriander leaves. Serve hot with steamed rice, naan, roti, or dosa.
