  • 3 tbsp Ghee clarified butter, divided
  • 1 Tamarind Pulp about the size of a small plum; or substitute with 1/2 tsp tamarind paste

Prepare the Spice Paste

  • Dry roast the mustard seeds, cumin seeds, curry leaves, fennel seeds, soaked red chilies, and black peppercorns in a pan until fragrant. Allow to cool slightly, then grind into a fine paste using a mortar and pestle or a spice grinder.

Cook the Prawns

  • Heat 1 tablespoon of ghee in a pan or skillet over medium heat. Add the prawns, salt, turmeric powder, and red chili powder. Sauté until the prawns are cooked through and pink, about 3-5 minutes. Remove the prawns from the pan and set aside.

Make the Ghee Roast

  • Add the remaining 2 tablespoons of ghee to the same pan. Add the spice paste and sauté for 1-2 minutes until fragrant. Stir in the tamarind pulp and cook for another minute, or until the ghee begins to separate and float on top of the masala (spice mixture).

Combine and Finish

  • Add the cooked prawns to the pan with the ghee roast masala. Gently stir to coat the prawns evenly with the spiced ghee. Cook for 2-3 minutes, until the masala is slightly dry. Serve hot as a side dish with rice and your favorite curry.
