Instructions

Prepare the Prawns

  • Clean and devein the prawns. Pat them dry with a paper towel.

Make the Marinade

  • In a bowl, combine the ginger-garlic paste, chili powder, turmeric powder, garam masala, cumin seeds, coriander powder, yogurt, and salt. Mix well.

Marinate the Prawns

  • Add the prawns to the marinade, ensuring they are evenly coated. Marinate for at least 15 minutes, or longer for a more intense flavor.

Fry the Prawns

  • Heat the oil in a pan over medium heat. Once hot, add the marinated prawns and fry until they turn golden brown and are cooked through, about 5-7 minutes, stirring occasionally.

Garnish and Serve

  • Garnish with chopped green chilies, onions, cilantro, and a squeeze of lemon juice. Serve hot as a side dish or appetizer.

Recipe Notes

Expert Tips for the Best Iral Varuval:

  • For extra flavor, add a pinch of asafoetida (hing) to the marinade.
  • Adjust the amount of chili powder according to your spice preference.
  • Don't overcrowd the pan when frying the prawns; fry them in batches to ensure even browning.
  • For a crispier prawn fry, let the prawns rest on a wire rack after frying to drain excess oil.
