  • 1.2 kg Chicken bone-in, thighs and/or drumsticks recommended
  • 2 tbsp Oil vegetable or canola oil
  • 1/2 cup Water

Instructions
 

Prepare the Spice Blend

  • Sauté 1 teaspoon of fennel seeds in 2 tablespoons of oil until fragrant.
  • Add 3 chopped onions and sauté until softened, about 2 minutes.
  • Stir in curry leaves, 2 teaspoons of ginger-garlic paste, and sauté until fragrant.
  • Add 1 teaspoon of turmeric, 1 teaspoon of garam masala, and salt to taste. Sauté well.

Cook the Chicken

  • Add 1.2 kg of chicken to the pan and mix well to coat with the spice mixture.
  • Add 1/2 cup of water, cover the pan, and simmer over low heat for 20 minutes.

Dry Roast & Grind Spices

  • In a separate pan, dry roast 1 teaspoon each of black pepper, fennel seeds, and cumin seeds for 2 minutes until fragrant.
  • Grind the roasted spices into a fine powder using a spice grinder or mortar and pestle.

Finish the Dish

  • Add the ground spice blend to the chicken and stir well to combine.
  • Increase the heat to medium-high and cook until the excess water evaporates, about 5-8 minutes.
  • Garnish with chopped coriander and serve hot.
