Ingredients

- 3 Onion finely chopped
- 2 teaspoons Ginger-Garlic Paste
- 1/2 bunch Coriander chopped
- 3-4 Curry Leaves
Instructions
Prepare the Spice Blend
- Sauté 1 teaspoon of fennel seeds in 2 tablespoons of oil until fragrant.
- Add 3 chopped onions and sauté until softened, about 2 minutes.
- Stir in curry leaves, 2 teaspoons of ginger-garlic paste, and sauté until fragrant.
- Add 1 teaspoon of turmeric, 1 teaspoon of garam masala, and salt to taste. Sauté well.
Cook the Chicken
- Add 1.2 kg of chicken to the pan and mix well to coat with the spice mixture.
- Add 1/2 cup of water, cover the pan, and simmer over low heat for 20 minutes.
Dry Roast & Grind Spices
- In a separate pan, dry roast 1 teaspoon each of black pepper, fennel seeds, and cumin seeds for 2 minutes until fragrant.
- Grind the roasted spices into a fine powder using a spice grinder or mortar and pestle.
Finish the Dish
- Add the ground spice blend to the chicken and stir well to combine.
- Increase the heat to medium-high and cook until the excess water evaporates, about 5-8 minutes.
- Garnish with chopped coriander and serve hot.
